We buy the anchovies at the most important fishing areas in Italy. The salt anchovies are sent to us inside special containers
and are ready for the definitive maturing process. Rocca has a secret for obtaining such savoury anchovies: after promptly
salting the fish, we let the anchovies mature slowly in our deep cellars at constant 8° to 10° C average temperature
throughout the year. We finally select from the various lots the one at the right maturing stage. On request, the fish
can be salted and put into glass jars or accurately washed, sliced manually and prepared in oil. Our range of anchovies
includes also various specialities based on anchovy fillets with spices: anchovy fillets prepared with parsley, chilli etc.
Last but not least, our anchovies prepared with a hot sauce from an old recipe of the early XX century: the anchovies go
through a further maturing (at least for two months), in order to give them such a delicious, refined and aromatic taste!
