Rocca's artichokes are obtained from fresh vegetables only, which we put into special medium-sized airtight metal
containers just after picking them. That's why our artichokes differ from very salty products that are kept inside
big plastic containers. Our canned artichokes have a very delicate taste, which, along with its fragrance, is easily
compromised with a strong desalination process. To prevent the loss of their distinctive taste and fragrance, we use
special techniques, which we learned from Emilio Rocca's original recipe. Since artichokes do not grow in Valtellina,
we go and get them at the place where they grow and prepare semifinished products directly on the spot. Then, we take
the vegetables to the factory and keep them available for preparing our best specialities. What we offer is therefore
a first-class product with an incomparable, delicate and durable taste, which fully justify its little bit higher price.
